Servings

Ingredients for 2

  • 180 g dried spaghetti
  • 100 g streaky bacon , chopped
  • 2 eggs , beaten
  • 40 g Cheddar , grated
  • 1 clove garlic , crushed
  • 1 tbsp vegetable oil
  • salt and pepper , to taste

Method

  1. Cook the spaghetti in salted boiling water until just tender, reserving a mugful of the cooking water.
  2. Fry the bacon and garlic in the oil until the bacon is crisp.
  3. Beat the eggs with the grated Cheddar and plenty of pepper.
  4. Drain the pasta and add it to the bacon pan off the heat, then quickly stir through the egg mixture, loosening with a splash of pasta water so it coats without scrambling.
  5. Season and serve straight away.
