Ingredients for 2
- 2 wild salmon fillets , thick cut, skin on
- 1 tbsp grapeseed oil
- 1 spring onion , finely sliced
- 1 tsp black and white sesame seeds , toasted
- Teriyaki
- 60 ml dark soy sauce
- 60 ml mirin
- 40 ml sake
- 1 tbsp caster sugar

- 100 g edamame , podded
Method
- Cook the sushi rice, then fold through the rice vinegar and a pinch of sugar and salt while warm.

- Sear the salmon skin-side down in the grapeseed oil until the skin is crisp, then turn and cook to medium - the centre should stay just translucent.
