Ingredients for 1

  • 50 ml premium craft gin , citrus or floral led
  • 150 ml artisan light tonic water , ice cold
  • block ice , large clear cubes
  • Garnish
  • 1 pink grapefruit peel , wide swathe
  • 1 fresh rosemary sprig
  • 2 pink peppercorns , lightly cracked

Method

  1. Chill a copa de balon glass in the freezer for ten minutes.
  2. Fill it with large clear block-ice cubes, packing them right to the rim.
  3. Pour the craft gin over the ice and add the cracked pink peppercorns.
  4. Top slowly with ice-cold artisan tonic, pouring over a bar spoon so the carbonation lasts.
  5. Express the grapefruit peel over the surface and drop it in with the rosemary sprig.
